A bold blend of Scotch bonnet peppers, allspice, nutmeg, ginger, lime, brown sugar, thyme and a touch of soy sauce. Use as a marinade, basting sauce, or as a tasty dipping sauce. For perfect Jerk chicken, marinate overnight before grilling, and serve extra on the side. Smother fish fillets with the sauce, and then pan fry for a quick and delicious main dish.
